  • 5 white potatoes
  • 2 tablespoons of extra virgin olive oil
  • 1 egg
  • 150 gr of buffalo ricotta
  • 100 gr of fresh white yogurt
  • a sprinkling of pepper
  • a pinch of salt
  • some seeds of fennel

Clean the potatoes

Wash the potatoes well under running water, peel and rinse them again after having reduced them into small slices to remove the excess starch that covers them naturally. Blot excess water with absorbent paper.

Prepare the filling

In a pan from the width around the 20-22 cm place a sheet of parchment paper and grease it slightly with a little extra-virgin olive oil. Coat the bottom and sides of the pan so prepared with the potato slices. In a separate bowl, beat the egg, seasoning it with a pinch of salt, pepper to taste and a few seeds of fennel (or even rosemary if you like more). Work in another bowl ricotta cheese and yogurt until a smooth and homogeneous mixture is created. Mix it with the beaten egg previously prepared and set aside.

Prepare the potato pie

Pour a layer of egg, ricotta and yogurt mixture on the bottom of potatoes in a pan, spread over other slices of tuber and continue like this until you finish with the mixture on top. Bake the potato pie in the oven a 200 ° for 40 minutes about and let it cool before serving it with good sausages.

Notes from the cook

The cake can obviously be enriched with some slices of Neapolitan salami, alternating it with potatoes. The flavor of fennel with this extra ingredient will be enhanced by making the preparation really special.
